Cinnamon Sweet Tortilla Chips with Fruit Salsa

Ingredients

2 tsp. olive oil

½ tsp. cinnamon, ground

⅛ tsp. salt

8 six-inch corn tortillas, cut into six wedges

1 Tbsp. cilantro, chopped

¼ cup (about 2 large) strawberries, diced

½ cup (about ½ medium) mango, diced

1 medium orange, peeled and diced

1 tsp. lime zest, grated

1 medium kiwifruit, peeled and diced

¼ cup pineapple tidbits, canned in their own juice, drained

Directions

Tortilla Chips
Preheat oven to 400 degrees. Use cooking spray on a shallow baking pan.

Mix olive oil, Cinnamon Sweet Drops, SweetLeaf Stevia, cinnamon and salt in a small bowl. Stir until ingredients are incorporated.

Place half of the tortilla wedges in a medium bowl. Drizzle half of the oil mixture over the wedges. Repeat with the remaining tortilla wedges and oil mixture. Using a spoon or clean hands, toss the wedges with the oil mixture. Place tortilla triangles in single layer on baking pan.

Bake for 5-7 minutes. Remove the baking sheet from the oven. Turn over the wedges.

Bake for an additional 5-7 minutes, or until the wedges are golden brown and crisp. Let cool for 10 minutes.

Fruit Salsa
Mix all ingredients in a medium-sized bowl until fruit is coated. Serve with tortilla chips and enjoy!
